Zucchini and Chicken Bake


This is our family's new favorite dinner and when I say favorite, I mean it!
We all L.O.V.E it! We should have plenty of left overs and there is never any.

I know I got the recipe off of AllRecipes.com but when I went back to find it I couldn't.

I'll give it to you Pioneer Woman style.
And if you don't read PW I'd like to know what rock you've been hiding under.

Slice your zucchini and cover the bottom of a 9x13 pan.  We like 2 layers cause we adore zucchini. Sprinkle salt, pepper and basil over the top. Then sprinkle shredded mozzarella cheese.  I could do without the cheese but it's good and the kids (think) they must have it. I don't put much though.
Don't pre-cook your zucchini. The original recipe tells you to. Don't. It turns into mush.  Unless you like baby food style mushy zucchini, then knock your socks of and pre-cook away.

Dip your chicken breasts in a little egg and then cover both sides in breading.  We use Shake 'n' Bake Italian Parmesan...It is SO Good.  I also pound our chicken breast flat and cut them in 3rds, they cook evenly and faster that way.
In a skillet add about 2-3 tbsp Olive Oil and grill your chicken for about 3 min each side.


Place your chicken breast on top of the zucchini.


Slice tomatoes and place on top of the chicken.  The kids and I really like tomatoes, Barry not so much.  So he just pulls it off when it's all done.  But trust me, the tomatoes are so good.


Now place slices of mozzarella on top of the tomatoes, as little or much as you want.  Then sprinkle with more Basil.  We use lots, cause it's good. ;)



Cover and bake at 400 for 25 minutes, remove foil and bake another 10 minutes.

Zucchini and Chicken Bake

2 Eggs
2 tbsp Olive Oil
1 Pkg Shake 'n' Bake Italian Parmesan (or your own Bread Crumbs)
4 Chicken Breast Halves...(We use 2 because we pound it flat and it feeds 4...twice)
4-5 Zucchini, Sliced 
Salt and Pepper
2-3 tsp. Basil
2-3 Tomatoes, Sliced
1/2 cup shredded Mozzarella cheese
Sliced Mozzarella Cheese

Just thought I'd share

I'm so in love with these shoes!
I have been waiting and waiting for Rocket Dogs to make shoes small enough for Jena and then went one better and made them to fit Sara too!
So these are Sara and Jena's new shoes. I adore them!

And just because I love these too.
This is the 3rd pair of Nike Reax that I have owned and they are my favorite.
Barry has owned 3 pairs too.
The first 2 pairs I had were Reax Run but now they have these Reax Crosstrain and they are even better.
If you have a wide toe box like me then you are sure to love these!

Mini Vacation, New Toys and A Baby

Jena and Ryan had a sleep over at Teri's house last night and Matt slept over too.
It could not have come at a better time! This Mama needed a break!
It turned out to be quite an adventure!



First they got to watch a Sheriff's Helicopter practice landings across the street from Teri's house. Sara was there at the time and put on a little show with her 'ooo's and aaa's and blowing kisses and waving to the helicopter.

After a movie and popcorn it was off to bed and then up again a bit too early for Teri but when Ry is hungry time is not a concern!

Teri and Matt then took them for a hike up Mill Creek Canyon. And then they went to East High to check out where High School Musical was filmed. Best Aunt and Uncle award for this one!

While putting Ry to bed tonight he informed Barry and I that he wanted to go to East High for High School because he wanted to be a Red Wildcat like Troy and Gabriella. This day will not soon be forgotten!

So what did Sara and I do all morning you ask?
Well, I looked like this until 2pm!

I've seriously never looked so good!
Call me for beauty tips anytime!
Seriously.

But I did do laundry and get clean sheets on all the beds and some dishes but mainly I started Melissa's quilt that I promised her I was going to make as soon as I knew what she was having! So Melissa, the quilt is on it's way even though Zac is almost 2 weeks old now!
By the way, you should go read her last blog post, her husband apparently lost his mind.

Then I headed out to pick up Barry's iPhone from the AT&T store. I picked mine up yesterday and I'm so happy with it. So happy in fact that I filled the memory completely and I ordered a 16gig white one today.

Anybody want to buy my 8gig G3 iPhone?
You can turn it into a light saber!
Now how cool is that!
I'm just sayin'.

And then the exciting part of the day arrived!
After texting Nate every hour on the status of Ashley and the soon arrival of Katie Lyn, she was finally born at 6:30!
So here are a few pictures of the newest family member!
She is a mini Ashley, not sure what Nate had to do with this baby.
Oh, she does have lots of Brown hair and that is from Nate.
6lb 10oz and 19in.
Jena was so excited to see her.
She is just enough older now than when Sara was born that she is much better at holding a baby without smothering them.What are the chances that when I go to find the picture of baby Kate on my computer that this picture pops up with the same file number from 16 months ago?
Sort of ironic so I just had to share.

I sold my iphone on ebay for $30 less than I paid for it over 1 year ago.
I can't help but wonder what idiot bought it, I mean why someone would want it or pay so much for it when the new one is coming out. Thank You 'trimoonle' in San Fransisco!

You just bought Barry and I both new iphones!

I've been phoneless for 4 days now! And not just phoneless, iphoneless! Wait till you own one, it is a whole new level of withdrawal I assure you!
